The specific objective of the project is to achieve a rationalization of the
technologies and of the preliminary analyses by the transfer of innovative
biotechnological solutions ables to:

guarantee safety of product usage;

guarantee typicalness of products;
·
promote the development and the exploitation of the productive area;
·
define
the requisites for the certification of the processes and products.

The transfer process will interest the areas:
·
dairying
·
bread and derived products
·
table olive and probiotic vegetable foods
·
meat products
fermented
·
oenological
·
olive-oil
·
agri-food safety
and it will be developed in three phases: promotion, demonstration, study and
analysis.
In the first phase it will be made an analysis of the agricultural and food
area, oriented to the knowledge of the innovation level reached and of some
technological specific needs of the enterprises interested. Through the
presentation of the offer of the available biotechnological innovations and the
investigation of the needs, the enterprises will be selected in order to utilize
the industrial technologies.
In the second phase it will be shown to the enterprises the efficacy of
the transferable innovations, by technological audits, information and
demonstration activity on techniques and applicable protocols.
During the third phase it will be valued the potentiality in application and in
industrial utilization of the technologies and so the transfer projects will be
arranged across the analysis of the competitive context for the selected
technologies and the study of the technical-economic practicability.
The design of strategies of industrial development to obtain technological
solutions to be utilized by the enterprises will be the final result.
